Ingredients
2 cups cooked chicken, shredded
1 can (10 oz) green enchilada sauce
1 can (4 oz) diced green chiles
1 cup sour cream
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
12 corn tortillas
1/2 cup chopped onion
1 tablespoon olive oil
Salt and pepper to taste
Chopped fresh cilantro for garnish (optional)
Directions
Preheat your oven to 350°F (175°C).
In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
In a large bowl, mix together the shredded chicken, green enchilada sauce, diced green chiles, sour cream, sautéed onions, and a pinch of salt and pepper.
Spread a thin layer of the chicken mixture on the bottom of a 9x13 inch baking dish.
Place 4 corn tortillas over the chicken mixture, overlapping as necessary.
