In the heart of the Midwest, where fields stretch as far as the eye can see and the air carries the scent of fresh earth, the slow cooker is a trusted friend in the kitchen. This honey garlic beef roast is a nod to the hearty meals my grandmother used to prepare on our family farm. It's a dish that brings the family together, with the sweet and savory aroma filling the house, reminding us of simpler times. Perfect for a Sunday dinner or a special occasion, this roast is a testament to the comfort and warmth of Midwestern cooking.
This honey garlic beef roast pairs beautifully with creamy mashed potatoes or buttery egg noodles, allowing the rich sauce to be soaked up with every bite. A side of roasted carrots or green beans adds a touch of color and a hint of freshness to the plate. And don't forget a slice of warm, crusty bread to mop up the last of the delicious gravy. For dessert, a classic apple pie or a scoop of vanilla ice cream would round out the meal perfectly.

Slow Cooker Honey Garlic Beef Roast
Servings: 6-8 servings
Ingredients
3-4 pounds beef chuck roast
1/2 cup honey
1/4 cup soy sauce
1/4 cup beef broth
5 cloves garlic, minced
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
1 teaspoon black pepper
1 onion, sliced
2 tablespoons cornstarch
2 tablespoons water
Salt to taste
Directions
Place the sliced onion at the bottom of the slow cooker.
Season the beef roast with salt and black pepper, then place it on top of the onions.
In a small bowl, whisk together the honey, soy sauce, beef broth, minced garlic, apple cider vinegar, and dried thyme.
Pour the honey garlic mixture over the beef roast.
Cover the slow cooker and cook on low for 8-10 hours, or until the beef is tender and easily pulls apart with a fork.
Once cooked, remove the beef from the slow cooker and set aside.
In a small bowl, mix the cornstarch with water to create a slurry.
Pour the slurry into the slow cooker and stir to thicken the sauce.
Return the beef to the slow cooker, coating it with the thickened sauce.

Variations & Tips
For a bit of heat, add a teaspoon of red pepper flakes to the honey garlic mixture. If you prefer a tangier flavor, increase the apple cider vinegar to two tablespoons. You can also add root vegetables like potatoes and carrots to the slow cooker for a complete one-pot meal. For a gluten-free version, use tamari instead of soy sauce. Leftovers can be shredded and used in sandwiches or tacos for a delicious twist.
