2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
12 ounces penne pasta
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, diced
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste
Chopped fresh parsley for garnish
Directions
Preheat your oven to 350°F (175°C).
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set aside. In the same skillet, add the bell peppers, onion, and garlic. Sauté until the vegetables are tender, about 5 minutes.
Reduce the heat to medium and add the heavy cream and chicken broth to the skillet. Stir in the Parmesan cheese until the sauce is smooth and creamy.
Add the cooked pasta and chicken back into the skillet, stirring to combine everything well. Season with salt and pepper to taste.
Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the mozzarella cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
