Ingredients
2 pounds ground beef
1 cup salsa
1 cup breadcrumbs
2 eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro (optional)
Directions
In a large mixing bowl, combine the ground beef, 3/4 cup of salsa, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Shape the mixture into a loaf that will fit inside your slow cooker.
Place the meatloaf in the slow cooker and pour the remaining 1/4 cup of salsa over the top.
Cover and cook on low for 6-8 hours, or until the meatloaf is cooked through and reaches an internal temperature of 160°F.
About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top of the meatloaf and cover to allow the cheese to melt.
