Slow Cooker Pasta e Fagioli Soup

Ingredients
1 tablespoon olive oil
1 pound ground beef or Italian sausage
1 medium onion, diced
2 carrots, diced
2 stalks celery, diced
3 cloves garlic, minced
1 (28-ounce) can diced tomatoes
1 (15-ounce) can tomato sauce
1 (15-ounce) can red kidney beans, drained and rinsed
1 (15-ounce) can great northern beans, drained and rinsed
4 cups chicken or vegetable broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper to taste
1 cup ditalini pasta
Fresh parsley, chopped, for garnish
Directions
1. In a skillet over medium heat, add olive oil and brown the ground beef or sausage until fully cooked. Drain excess fat.
2. Transfer the cooked meat to the slow cooker.
3. Add the onion, carrots, celery, and garlic to the slow cooker.
4. Stir in the diced tomatoes, tomato sauce, kidney beans, great northern beans, and broth.
5. Season with oregano, basil, thyme, salt, and pepper.
6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
7. About 30 minutes before serving, stir in the ditalini pasta and cook until tender.
