2 pounds pork shoulder, cut into 1-inch cubes
1 tablespoon olive oil
4 large potatoes, peeled and diced
3 carrots, sliced
1 onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary

2 tablespoons cornstarch
2 tablespoons water

Directions
Heat the olive oil in a large skillet over medium-high heat. Add the pork cubes and brown them on all sides. Transfer the pork to the slow cooker.
Add the potatoes, carrots, onion, and garlic to the slow cooker with the pork.
Pour the chicken broth over the ingredients in the slow cooker. Stir in the Worcestershire sauce, thyme, rosemary, salt, and pepper.
Cover and cook on low for 7-8 hours or until the pork is tender and the vegetables are cooked through.
About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the stew to thicken the broth.
