Chicken Teriyaki Fried Rice with Broccoli is one of those delightful dishes that brings together comfort and flavor in a single pan. I first stumbled upon this recipe during a hectic week when I needed something quick yet satisfying. The combination of tender chicken, savory teriyaki sauce, and vibrant broccoli makes it a go-to meal for busy weeknights. Plus, it's a great way to use up leftover rice and veggies, making it both economical and delicious.
This dish is quite filling on its own, but if you're looking to round out the meal, consider serving it with a simple side salad or some steamed edamame. A light miso soup would also pair beautifully, adding a warm and comforting element to your dinner table. For a bit of crunch, try some sesame crackers or a sprinkle of toasted sesame seeds on top.

Easy Chicken Teriyaki Fried Rice with Broccoli
Servings: 4

Ingredients
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breast, diced
Salt and pepper to taste
2 cups broccoli florets
3 cups cooked jasmine rice, preferably day-old
1/4 cup soy sauce
2 tablespoons teriyaki sauce
2 teaspoons sesame oil
2 eggs, beaten
3 green onions, sliced
Sesame seeds for garnish (optional)
1 pound boneless, skinless chicken breast, diced
Salt and pepper to taste
2 cups broccoli florets
3 cups cooked jasmine rice, preferably day-old
1/4 cup soy sauce
2 tablespoons teriyaki sauce
2 teaspoons sesame oil
2 eggs, beaten
3 green onions, sliced
Sesame seeds for garnish (optional)
Directions
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Season the diced chicken with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add the broccoli florets and stir-fry for about 3-4 minutes until they are tender-crisp.
Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir in the soy sauce, teriyaki sauce, and sesame oil, mixing well to combine.
Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them into the rice.
Return the cooked chicken to the skillet and stir everything together until well combined.
Stir in the sliced green onions and cook for another minute. Taste and adjust seasoning if needed.

Variations & Tips
For a vegetarian version, you can replace the chicken with tofu or simply add more vegetables like bell peppers or snap peas. If you prefer a spicier kick, add a dash of sriracha or red pepper flakes. For a more intense teriyaki flavor, increase the amount of teriyaki sauce to taste. You can also use brown rice for a healthier twist, though it may alter the texture slightly.
