In the heart of the Midwest, where the fields stretch as far as the eye can see and the seasons paint the landscape with their own unique hues, comfort food is more than just a meal—it's a tradition. This Kielbasa Casserole with Penne is a dish that brings together the hearty flavors of smoked sausage with the comforting embrace of pasta, a staple in many family gatherings. It's a recipe that has been passed down through generations, each adding their own touch. Whether you're looking to warm up on a chilly evening or bring a taste of nostalgia to your table, this casserole is a delightful choice.
This Kielbasa Casserole pairs beautifully with a crisp green salad, perhaps with a tangy vinaigrette to balance the richness of the dish. A side of homemade bread or dinner rolls would also complement the meal, perfect for sopping up any extra sauce. For a touch of sweetness, consider serving with a side of applesauce or a simple fruit salad.

Kielbasa Casserole with Penne
Servings: 6
Ingredients
1 pound kielbasa, sliced
12 ounces penne pasta
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 can (14.5 ounces) diced tomatoes, undrained
1 cup shredded cheddar cheese
1/2 cup sour cream
Salt and pepper to taste
1 teaspoon dried oregano
1 teaspoon dried basil
Directions
Preheat your oven to 350°F (175°C).
Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned. Remove from the skillet and set aside.
In the same skillet, add the chopped onion and bell pepper. Sauté until the onion is translucent and the pepper is tender.
Add the minced garlic and cook for another minute until fragrant.
Stir in the diced tomatoes, oregano, basil, salt, and pepper. Let the mixture simmer for about 5 minutes.
Add the cooked penne and kielbasa to the skillet, stirring to combine.
Remove from heat and stir in the sour cream and half of the shredded cheddar cheese.
Transfer the mixture to a greased casserole dish. Sprinkle the remaining cheddar cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Variations & Tips
For a spicier kick, consider adding a pinch of red pepper flakes or using a spicy kielbasa. You can also add more vegetables, such as mushrooms or zucchini, for added nutrition and flavor. If you prefer a creamier texture, mix in a bit more sour cream or even a splash of heavy cream before baking. For a different cheese flavor, try using Monterey Jack or a blend of Italian cheeses.
