Slow cooker Amish Swiss cheese noodles are the kind of comforting Midwestern casserole-style supper that leans on a few humble ingredients to create something far richer than you would expect. This version is especially useful when you want an easy family dinner with almost no prep, since the slow cooker does the work of softening the noodles and melting the cheese into a creamy, stretchy sauce. The Amish-inspired combination of egg noodles, dairy, and Swiss cheese has that practical farmhouse spirit that makes simple pantry cooking so appealing.

Serve these rich noodles with something crisp or savory on the side to balance the creaminess. A plate of roasted green beans, steamed broccoli, buttered peas, or a sharp cucumber salad works nicely, and if you want to make it a heartier meal, add sliced ham, roast chicken, or browned sausage. Warm applesauce is also a very fitting pairing if you want to lean into that classic comfort-food feel.

Ingredients

12 ounces wide egg noodles

2 cups shredded Swiss cheese
1 can (10 1/2 ounces) condensed cream of chicken soup
2 cups milk

Directions

1. Lightly grease the inside of a 4- to 6-quart slow cooker. Add the dry egg noodles, shredded Swiss cheese, condensed cream of chicken soup, and milk.

2. Stir well so the noodles are evenly coated and the soup begins to blend into the milk. Cover and cook on low for 2 1/2 to 3 1/2 hours, stirring once or twice during cooking if your slow cooker runs hot around the edges.

3. When the noodles are tender and most of the liquid has thickened into a creamy sauce, stir again thoroughly, scraping down the sides so all the melted cheese is incorporated.

4. Let the noodles sit uncovered for 5 to 10 minutes to thicken slightly, then spoon them hot from the slow cooker and serve.

Variations & Tips

Add a little seasoning: Even though the classic version is very simple, a pinch of black pepper, onion powder, or dry mustard can add a little depth without changing the character of the dish.

Watch the liquid level: Slow cookers vary quite a bit. If the noodles seem dry before they are fully tender, add a splash more milk. If the sauce seems too loose at the end, leave the lid off for a few minutes so it can tighten up.

Make it heartier: Stir in diced cooked ham or shredded chicken near the end of cooking if you want to turn these noodles into a one-pot main dish. Ham is especially good with Swiss cheese.

Try a different soup base: Cream of mushroom or cream of celery can be used in place of cream of chicken if that is what you have on hand. Each gives the noodles a slightly different savory note while keeping the texture creamy.

Use freshly shredded cheese: Freshly shredded Swiss melts more smoothly than pre-shredded cheese, which often contains anti-caking ingredients that can make the sauce a bit grainy.
