One of the greatest things about these egg muffins is that most or even all of the prep work can be done beforehand. You can easily bake them at night and then save them in the fridge for up to four days, you could freeze them for longer storage and simply defrost the night before, or you could prep the veggies beforehand and easily assemble and bake the muffins in 15-20 minutes in the morning.
