Cooktop Cove: Chicken and dumplings recipe uses pancake mix as a tasty shortcut
By Chris Ternate
There are few dishes that can instantly warm you on the inside and make you feel like you're truly enjoying a home cooked meal. That home cooked hearty taste is a hard one to find. However, chicken and dumplings is one such example of the kind of meal that can make you feel good inside.
Start by popping in your denser vegetables like carrots and potatoes which TosTinMan EasyCooking used here. To that you'll add your cut chicken breast and a couple cans of cream of chicken soup. Let the whole thing cook for about three hours.
TosTinMan EasyCooking then added the frozen vegetables here (a blend of carrots, peas and corn). You could add another vegetable if you'd like or skip adding frozen vegetables all together (they cook pretty quickly).
Lastly, he adds his special ingredient, clumps of Bisquick pancake mix batter. He used less water than suggested to get that clumpy/biscuit-like texture. TosTinMan EasyCooking suggests small clumps since they'll eventually grow in size.
Once you've let it cook a little longer spoon yourself a generous serving in a bowl and enjoy the hearty goodness!
