Cooktop Cove: How to make low carb ham and cheese quiche

Quiche is one of my favorite low-carb meals. It’s easy to pull together and you can use ingredients you already have on hand. The recipe below combines spinach, ham, and cheddar cheese, but you can experiment freely. Try bacon, broccoli, and goat cheese. Or mushrooms, Gruyere, and Italian sausage.
Traditionally, quiche is made with a pastry crust, but to make it low-carb, you can just skip the crust altogether. Top it with a bit of extra shredded cheese for a nice browned top. One of my favorite things about this recipe is that it is delicious warm out of the oven, at room temperature, or eve cold right out of the fridge.
Low-Carb Ham and Cheese Quiche

Cooking spray
8 large eggs
1/2 cup heavy cream
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
6 ounces frozen chopped spinach, thawed and squeezed dry
1 cup cooked ham diced
1 cup shredded Cheddar cheese
Preheat the oven to 375°F. Spray a 9-inch pie dish with cooking spray.
In a mixing bowl, whisk together the eggs, cream, salt, and pepper. Stir in the spinach, ham, and cheese. Pour the mixture into the prepared pie dish.
Bake, uncovered, in the preheated oven for about 40 minutes, until the center is set and top begins to brown.
