Imagine your favorite hash browns baked in a pie with bacon. That is what you will find in a Polish potato pie – a delicious treat that can just as easily be served at dinnertime or for brunch. The recipe below combines grated potatoes, bacon, eggs, and a touch of onion for a simple recipe that can be topped with all variety of toppings.
When serving this dish, consider placing bowls of sour cream, sliced green onion, and cheddar cheese on the table, so that each guest can add what he or she prefers to the pie. While this pie is best served hot out of the oven, you can reheat delicious leftovers under the broiler.

1 pound bacon, diced
1 medium onion, minced
2 1/2 pounds potatoes, peeled and grated
3 eggs
1/4 teaspoon black pepper
Preheat the oven to 375 degrees.
Cook the bacon in a skillet until crispy. Reserve the bacon and fat separately.
Add 1 tablespoon of bacon fat back to the pan and add the onion. Cook over high heat until browned.
Use a pastry brush to grease a 9x13 inch casserole dish with bacon fat. Set aside.
In a bowl, combine the cooked bacon, cooked onion, potatoes, and reserved bacon fat. Stir well to combine.
Beat the eggs in a separate bowl, then add to the bowl of potatoes and bacon, along with the pepper. Stir well to combine.
Pour into the prepared baking dish and bake for 1 hour or until crispy.
