1 ½lb cube steak
4 eggs, beaten and separated
1 cup all-purpose flour
Salt and pepper, to taste
½ teaspoon paprika
1 cup breadcrumbs
½ cup parmesan cheese, grated
Vegetable oil
Cut the steak into bite-sized pieces, then set aside.
Lay out four large, shallow bowls and a wide plate in a row.
In the first bowl beat 2 eggs.
In the second bowl, whisk together the flour, salt and pepper, and paprika until well combined.
In the third bowl, whisk the remaining two beaten eggs.
In the final bowl whisk together the breadcrumbs and parmesan cheese.
Place a large skillet over a medium high heat and add about 1 of vegetable oil.
While the oil heats, take each piece of steak and dip it in each of the bowls sequentially, starting with the egg, then the flour mixture, then in the egg, and finally in the breadcrumb and cheese mixture, then let them rest on the plate.
Once the oil is shimmering, use tongs or a spoon to transfer the steak bites into the oil. Fry for about 1 minute on each side, or until golden brown, then transfer to a large plate lined with paper towel to drain the excess oil.
Serve immediately.
