I remember the first time I had this recipe. It was when visiting my grandmother's house and she had just made this cake; the whole house smelled like sweet pineapples. I can still remember how excited I was when she brought out the casserole dish and the aroma hit me. Moist Pineapple Cake:
Ingredients:
- One can of crushed pineapples
- 1 1/2 cups of all-purpose flour
- 1 cup of sugar
- 2 eggs
- 1/2 cup of vegetable oil
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- Pinch of salt
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, mix together the flour, sugar, baking soda, and salt.
3. Add the eggs and stir until well combined.
4. Add the oil, pineapple, and vanilla extract; stir until fully mixed.
5. Pour the mixture into a casserole dish.
6. Place the dish in the oven and bake for 35-40 minutes or until a toothpick comes out clean.
7. Once the cake has cooled, spread the cream cheese icing (see below) over the top.
8. Serve and enjoy! If you desire, garnish with shredded coconut.
Cream Cheese Icing Recipe:
Ingredients
- 4 ounces of cream cheese
- 1/4 cup of butter, softened
- 2 cups of powdered sugar
- 1 teaspoon of vanilla extract
Instructions:
1. In a bowl, blend together the cream cheese and butter.
2. Gradually add the powdered sugar, stir until completely mixed.
3. Add the vanilla extract and stir until smooth and creamy.
4. Use immediately or refrigerate until ready to use.
