Recipe: Rotel Tacos
Ingredients:
1 pound of ground beef
1 tablespoon of taco seasoning
1 can of Rotel tomatoes, 10 ounces, including the liquid
Half a block of Velveeta, 8 ounce
2 cups of chopped lettuce
10 crispy taco shells
Instructions:
1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
2. Add the taco seasoning to the cooked beef, following the package instructions. Mix well and let it simmer for a couple of minutes.
3. In separate pan, mix can of Rotel tomatoes and Velveeta. Cook until cheese melts (around 10 mins).
4. To assemble the tacos, spoon some beef followed by cheese mixture into each taco shell.
5. Top the tacos with chopped romaine lettuce and other preferred toppings like sour cream, diced tomatoes, etc.
