Slow Cooker Mountain Man Breakfast:
Ingredients:
1 pound diced precooked ham or bacon
12 eggs
32 ounces frozen hash browns
1 1/2 cups grated cheddar cheese
1/2 diced onion
3/4 cup milk
Salt and pepper to taste
Optional: 1 diced green pepper
Instructions:
1. In a large slow cooker, layer half of the frozen hash browns.
2. Add half of the diced ham or bacon, half of the chopped onion, and half of the green pepper (if using).
3. Sprinkle half of the grated cheddar cheese on top.
4. Repeat the layering with the remaining hash browns, ham or bacon, onion, green pepper, and cheese.
5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
6. Pour the egg mixture evenly over the layers in the slow cooker.
7. Cover the slow cooker and cook on low for 6-8 hours or until the eggs are set and the edges are golden brown.
