Keto Pecan Pie
Ingredients:

almond pie crust1 room temperature egg
3/4 cup unsalted butter
3/4 cup monkfruit sweetener (we recommend Besti Powdered Monk Fruit Allulose Blend)
1.5 cups heavy cream
1 teaspon sea salt
1/2 tablespoon vanilla extract
3/4 teaspoon maple extract
2 cups coarsely chopped pecans plus 1/2 cup pecan halves for topping
Instructions:
1. Preheat oven to 350°F (177°C). Prepare pie crust based on
this recipe.
2. In a large sauté pan, melt butter with monkfruit sweetener until dark golden.
3. Add cream and salt, simmer until thick and caramel-like.
4. Remove from heat, stir in vanilla and maple extracts.
5. Let pie crust and caramel cool. Whisk in egg.
6. Spread chopped pecans in crust, pour caramel mixture, top with pecan halves.
4. Bake 30-35 mins until set. Cool, and ideally refrigerate for 60 mins before slicing.
