Cooktop Cove: My friend made me try these "Party Potatoes" - One bite, and I was completely hooked!
By Georgia Lynn
Party Potatoes Casserole, often dubbed as "funeral potatoes" or "cheesy potatoes," is a beloved comfort dish commonly found at gatherings across the Midwest of the United States. This casserole combines tender potatoes with creamy cheese sauce, topped with a crispy layer of crushed potato chips for an irresistible crunch. While its name seems to stem from its frequent appearance at after-funeral dinners, the dish has transcended its somber associations to become a staple at celebrations like potlucks, holiday dinners, and of course, parties. Its origins are a bit fuzzy, but it seems to have roots in Midwest and Mormon potluck traditions.
This scrumptious casserole stands out as a hearty side dish but can easily become the star of your meal with just a few additions. To serve, consider lighter sides to balance the richness, such as a crisp green salad or steamed vegetables. For those looking for a non-vegetarian option, grilled chicken or a spiral ham complement the creamy texture and cheesy flavor. Party Potatoes Casserole can be enjoyed warm straight out of the oven or at room temperature, making it a versatile choice for any occasion.
