McKayla here, and I'm just tickled to share with you one of my most cherished recipes that's sure to wrap your family up in a blanket of comfort—Chicken Broccoli Rice Casserole. This dish is a genuine treasure in our little community, perfect for those evenings when you crave something hearty and satisfying. Brought down through generations, it's a versatile casserole that caters to all, whether it's a bustling weeknight or a relaxed weekend dinner. From its creamy texture to its savory flavors, it's just the thing to make your loved ones feel special and cared for.
Now darlings, this casserole is almost a meal by itself, but to turn it into a real family feast, I like to pair it with a crisp, fresh salad and some warm dinner rolls to sop up every last bit of that creamy sauce. And if you're feeling a little fancy, a light white wine for the grown-ups can elevate this homey dish to new heights.
Chicken Broccoli Rice Casserole
Servings: 6
Ingredients:
- 2 cups of long-grain white rice, cooked and fluffy
- 2 cups of cooked chicken, shredded (leftovers or rotisserie work wonders!)
- 1 medium onion, finely chopped
- 3 cups of fresh broccoli florets, steamed just to tender
- 1 can (10.5 oz) of cream of chicken soup
- 1 can (10.5 oz) of cream of mushroom soup
- 1 cup of mayonnaise
- 1 cup of sour cream
- 2 cups of shredded cheddar cheese, divided
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- A sprinkle of paprika (just for a touch of color!)
Directions:
1. Preheat your oven to a cozy 350°F and lightly grease a 9x13 inch baking dish.
2. In a large bowl, mix together your shredded chicken, steamed broccoli, and chopped onion.
3. In a separate bowl, whisk together the cream of chicken soup, cream of mushroom soup, mayonnaise, sour cream, 1 cup of cheddar cheese, garlic powder, salt, and pepper until it's smooth as satin.
4. Gently fold in the cooked rice to the creamy mixture, then combine it with the chicken and broccoli blend.
