Every family has that one dish that's been passed down like a well-loved cookbook - slightly worn but filled with memories. Cheese Chicken is that dish for us. It's the warm hug at the end of a long day and the high-five at dinner parties. I picked up this recipe while visiting a friend in Wisconsin (the cheese capital, I might say!), and I've put my own little twist on it since then. It's the kind of meal that is perfect for anyone looking to cozy up with something that feels indulgent but doesn't demand hours in the kitchen. Plus, who doesn't love the combination of cheese and chicken?
To round out this comforting meal, I love serving Cheese Chicken with a side of garlic mashed potatoes or buttery egg noodles. If I'm feeling a bit more virtuous, a crisp green salad or steamed veggies like broccoli or asparagus can balance out the richness beautifully.
Cheeziness Overload Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 2 tablespoons chopped fresh parsley, for garnish
Directions:
1. Preheat your oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and onion powder.
2. Heat olive oil over medium-high heat in a large oven-safe skillet. Add chicken and sear for about 2-3 minutes on each side, or until they develop a nice golden crust.
3. In a separate bowl, mix together the shredded cheddar cheese, cream cheese, and Parmesan cheese until well combined.
4. Spread the cheese mixture over the seared chicken breasts evenly.
5. Pour chicken broth into the skillet, being careful not to wash off the cheese topping from the chicken.
6. Transfer the skillet into the preheated oven and bake for 20-25 minutes, or until the chicken is thoroughly cooked and the cheeses are bubbly and golden.
7. Let the dish rest for a couple of minutes after taking it out of the oven. This is when the magic happens – the cheese settles into this glorious, creamy topping.
Garnish with chopped parsley and serve warm.

- If you're in the mood for a little kick, try mixing in a small can of diced green chilis into the cheese mixture.
- For an extra layer of texture and flavor, top the chicken with breadcrumbs mixed with melted butter before baking in the oven.
