Slow Cooker Lemon Garlic Chicken
Servings: 4-6
Ingredients
- 4 boneless, skinless chicken breasts (about 2 lbs)
- 1/2 teaspoon paprika
- Salt and freshly ground black pepper, to taste
- 4 garlic cloves, minced
- 1/3 cup freshly squeezed lemon juice
- 1/2 cup low-sodium chicken broth
- 2 tablespoons unsalted butter, melted
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
- 1 teaspoon dried oregano or thyme
- Lemon slices, for serving
Directions
1. Generously season the chicken breasts with paprika, salt, and pepper.
2. Place the minced garlic at the bottom of the slow cooker, then lay the seasoned chicken breasts over the top.
3. In a small bowl, whisk together the lemon juice, chicken broth, and melted butter. Pour the mixture over the chicken in the slow cooker.
4. Sprinkle the chopped parsley and dried herbs over the chicken.
5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is cooked through and tender.
6. If desired, broil the cooked chicken breasts in the oven for 2-3 minutes for a golden finish before serving.
7. Plate the chicken and spoon the sauce over the top. Garnish with extra chopped parsley and lemon slices.
Variations & Tips
For those with little ones who might be wary of "green things" in their food, you can hold the parsley garnish on their servings—or, chop it extra fine so it's practically camouflaged. And if you're catering to someone who loves an extra kick, feel free to sprinkle in some red pepper flakes for warmth. If lemon isn't a favorite or you're simply looking to mix things up, try using orange juice for a sweeter twist. Always remember, the beauty of home cooking is that it's as adaptable as we need it to be, just like us parents. Enjoy every bite and the moments shared around the dinner table.
