If you're anything like me, finding that perfectly cozy yet easy meal for a busy weeknight is like striking gold. That's exactly what happened when I first tossed together this Garlic Mushroom Grilled Cheese. It's a delightful twist on the classic grilled cheese, packed with the rich flavors of sautéed mushrooms and garlic, all melted together with gooey cheese. It's the perfect comfort dish that elevates a simple meal to something special without any fuss.
This scrumptious sandwich pairs wonderfully with a light, crisp side salad or some sweet potato fries for a touch of sweetness. If you’re in the mood for something a bit heartier, a bowl of tomato soup makes a classic accompaniment, turning this sandwich into a full, satisfying meal. For a lighter option, consider a fresh cucumber salad dressed with vinegar and oil.
Garlic Mushroom Grilled Cheese
Servings: 2
Ingredients
4 slices of your favorite bread
1 cup of sliced mushrooms
2 cloves of garlic, minced
1 tablespoon of butter, plus more for spreading on bread
1 tablespoon of olive oil
4 slices of cheddar or Swiss cheese
Salt and pepper to taste
Directions
Heat the olive oil in a pan over medium heat. Add the garlic and mushrooms, sautéing until the mushrooms are soft and golden. Season with salt and pepper to taste.
Spread butter on one side of each bread slice. Flip the slices over and stack cheese on the unbuttered sides.
Spoon the sautéed mushrooms onto the cheese on two of the slices. Top with the remaining slices of bread, buttered side up.
Heat a clean skillet over medium heat and place the sandwiches in the pan, pressing them lightly with a spatula.
Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove from heat, slice in half, and serve warm.
Variations & Tips
To mix things up, try different types of mushrooms like shiitake or portobello for a new flavor. You can experiment with cheese varieties as well; perhaps a smoky Gouda or a sharp provolone. For an extra layer of flavor, add some caramelized onions to the mushroom mix, or if you like a little crunch, throw in some arugula or spinach between the cheese and mushrooms before cooking.
