If you're looking for something to bring a warm smile to your table, these biscuits are just the ticket!
These Peach Butter Swim Biscuits are scrumptious on their own, but they also pair beautifully with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent dessert. For a brunch setting, serve them warm alongside your favorite coffee or tea. If you're looking to balance the sweetness, a side of crispy bacon or a savory sausage link does wonders.
Peach Butter Swim Biscuits
Servings: 8 servings
Ingredients
1 cup peaches, peeled and sliced
1/2 cup granulated sugar
1/4 teaspoon ground cinnamon
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1 cup whole milk
1/2 cup unsalted butter, melted
Directions
1. Preheat the oven to 375°F (190°C).
2. In a small bowl, combine sliced peaches, sugar, and cinnamon. Set aside to let the peaches release their juices.
3. In a large mixing bowl, whisk together flour, baking powder, and salt.
4. Cut in the 1/2 cup of cold cubed butter into the flour mixture until the mixture resembles coarse crumbs.
5. Gradually add milk to the flour mixture, stirring until a dough forms.
6. Pour the 1/2 cup of melted butter into a 9x13 inch baking dish, making sure it covers the entire bottom.
7. Place dollops of dough evenly in the buttered baking dish. The biscuits will swim in the butter as they bake.
8. Spoon the peach mixture over the top of the biscuit dough.
9. Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden and cooked through.
10. Remove from oven and let cool slightly before serving.
Variations & Tips
For a special twist, you can add a pinch of nutmeg or ginger to the peach mixture to enhance the flavor. If peaches aren't your thing, try substituting with apples or blackberries for a different but equally delicious treat. For those who prefer less sugar, reduce the sugar mixed with the peaches or use a sugar substitute suitable for baking.
