My Low Carb Dill Pickle Chicken Fritters are just the ticket for a cozy family dinner that keeps everyone's carb-count in check. Inspired by a traditional Midwest love for pickles, this dish incorporates that tangy flavor into a beloved fritter form, making it a delightful yet health-conscious choice for family meals.
These fritters are sumptuous on their own, but if you’d like to round out the meal, serve them with a side of creamy mashed cauliflower or a fresh green salad. Both sides complement the crispy tanginess of the fritters beautifully. For an extra touch of zest, a dollop of ranch dressing or Greek yogurt on the side makes for a perfect dipping companion!
Low Carb Dill Pickle Chicken Fritters
Servings: 4
Ingredients
2 cups cooked chicken, shredded
1/2 cup almond flour
1/4 cup chopped dill pickles
1/4 cup shredded cheddar cheese
2 green onions, finely chopped
1 large egg
1 tablespoon dill pickle juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil or avocado oil, for frying
Directions
1. In a large mixing bowl, combine shredded chicken, almond flour, chopped dill pickles, cheddar cheese, and green onions.
2. In a small bowl, whisk the egg with pickle juice, garlic powder, salt, and pepper until well combined.
3. Pour the egg mixture into the chicken mixture and mix until everything is well incorporated.
4. Heat a generous amount of oil in a skillet over medium heat.
5. Spoon the chicken mixture into the hot oil, forming small patties. Flatten them slightly with the back of a spoon.
6. Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
7. Remove the fritters from the skillet and let them drain on paper towels to remove excess oil.
8. Serve warm with your choice of dipping sauce.
Variations & Tips
For those who like a little extra spice, feel free to add a pinch of cayenne pepper into the batter. And if you’re accommodating someone who doesn’t love pickles, substitute the dill pickles with finely chopped bell peppers for a sweeter taste. You can also swap the cheddar cheese for mozzarella for a milder flavor that lets the chicken shine!
