There's something so comforting about a warm, cheesy casserole on a cool evening, isn't there? My Pepper Jack Potato Casserole is a family favorite around here, bringing a spicy twist to our dinner table. This casserole combines the creamy texture of potatoes with the zesty punch of pepper jack cheese, enveloped in a creamy sauce that brings all the flavors together beautifully. It's perfect for a cozy family meal or a potluck gathering, and it's always a hit with kids and adults alike!
This hearty casserole pairs wonderfully with a crisp, green salad to add a fresh contrast to the meal or some steamed vegetables for a wholesome dinner. For an extra special touch, serve it with a side of garlic bread or dinner rolls to soak up all the creamy goodness. It's also great as a standalone dish, offering a satisfying meal with its rich layers.
Pepper Jack Potato Casserole
Servings: 8
Ingredients
4 cups of thinly sliced potatoes
1 onion, chopped
2 cups of shredded Pepper Jack cheese
1 cup sour cream
1 cup milk
1/4 cup all-purpose flour
1/4 cup butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika (for garnish)
Directions
1. Preheat your oven to 350°F (175°C).
2. Grease a 9x13 inch baking dish.
3. Layer half of the sliced potatoes at the bottom of the dish, followed by half of the chopped onion, and sprinkle one cup of pepper jack cheese on top.
4. Repeat the layering with the remaining potatoes, onion, and another cup of cheese.
5. In a medium saucepan, melt butter over medium heat. Stir in flour, and cook for about a minute. Then gradually add milk, stirring continuously until the mixture thickens.
6. Remove saucepan from heat, and stir in sour cream, salt, pepper, and garlic powder.
7. Pour the sauce evenly over the layered potatoes and onions in the baking dish.
8. Cover the dish with aluminum foil and bake for 60 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden and bubbly.
9. Sprinkle paprika over the casserole before serving for a touch of color.
Variations & Tips
For those who might like it a bit less spicy, you can use a mix of Monterey Jack and Pepper Jack cheeses. If you're catering to a meat-loving crowd, adding cooked, diced chicken or ground beef between the layers can turn this into a complete meal. For a vegetarian twist, mix in some spinach or bell peppers for added color and nutrients.
