White Lasagna Soup is a creamy, comforting twist on the traditional lasagna that we all know and love. It combines the rich flavors of a white sauce lasagna in a delightful, easy-to-serve soup format. Perfect for those chilly evenings or when you need a cozy meal that feels like a warm hug, this soup is bound to become a family favorite.
This velvety soup pairs wonderfully with a crispy green salad and some warm, crusty bread for dipping. If you’re feeling extra indulgent, top with a little extra grated Parmesan and perhaps a sprinkle of fresh parsley to brighten the dish.
White Lasagna Soup
Servings: 6
Ingredients
1 tablespoon olive oil
1 medium onion, chopped
4 garlic cloves, minced
1 pound ground chicken or turkey
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
4 cups chicken broth
1 cup heavy cream
1 cup whole milk
9 lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Directions
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onions are translucent and fragrant.
2. Add the ground chicken or turkey to the pot, seasoning with salt, pepper, and red pepper flakes. Cook until the meat is browned and no longer pink.
3. Pour in the chicken broth, heavy cream, and milk, stirring to combine. Bring the mixture to a light simmer.
4. Add the broken lasagna noodles to the pot, ensuring they are submerged. Simmer for about 10-15 minutes, or until the noodles are tender.
5. Reduce the heat to low and stir in the ricotta, mozzarella, and Parmesan cheeses until the soup is creamy and smooth.
6. Finally, stir in the chopped parsley and remove from heat. Serve hot with additional cheese if desired.
