Lemon Fluff
Servings: 6
Ingredients:
1 package (3.4 oz) instant lemon pudding mix
1 cup cold milk
1 tub (8 oz) Cool Whip, thawed
1 lemon (for zest)
Optional: additional lemon zest or slices for garnish
Directions
Prepare the Pudding: In a large mixing bowl, whisk together the instant lemon pudding mix and cold milk. Beat for about 2 minutes until the pudding is well mixed and slightly thickened.
Add Cool Whip: Gently fold in the Cool Whip with the pudding mixture until combined. Be careful not to overmix to keep the fluffiness.
Add Lemon Zest: Grate the zest of one lemon and fold it into the mixture for a fresh, citrus flavor.
Chill: Transfer the mixture to a serving bowl or individual dessert cups. Refrigerate for at least 1 hour, or until set.
Serve: Garnish with additional lemon zest or lemon slices if desired, right before serving.
