Back when I was just a young gal, no bigger than a cornstalk, my mama used to make the most delightful little snacks that would bring warmth to any frosty Midwestern evening. Today, I want to share a recipe with a bit of a modern twist, blending our traditional Midwestern love for cheese with a splash of contemporary flavors. These Oven Fried Feta Rolls with Chili Honey are just the right kind of treat for a gathering or a cozy night in. The gooey richness of feta wrapped in a crispy shell, drizzled with spicy-sweet chili honey, just melts in your mouth, paying homage to the comforts of the past while embracing the zest of the present.
These delightful feta rolls are mouthwateringly tasty on their own, but why stop there? Pair them with a crisp salad tossed in a light vinaigrette to cut through the richness, or serve alongside a platter of fresh, crusty bread dipped in olive oil and herbs for a heartier meal. For an appetizer setup, you might add a selection of marinated olives and sundried tomatoes to complement the flavors.
Oven Fried Feta Rolls with Chili Honey
Servings: 4-6 servings
Ingredients
1 package of phyllo dough, thawed
8 oz feta cheese, cut into small logs
1/4 cup of melted butter
1/2 cup of honey
1 tablespoon chili flakes
1 teaspoon apple cider vinegar
Fresh parsley for garnish (optional)
Directions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Lay out one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again, repeating until you have 4 layers.
3. Cut the layered phyllo into strips about 3 inches wide. Place a piece of feta at the end of each strip.
4. Roll the feta up in the phyllo, folding the edges to seal and create a little package. Place the rolls seam-side down on the prepared baking sheet.
5. Brush the outside of each roll with more melted butter, then bake in the preheated oven for 20-25 minutes, or until golden and crispy.
6. While the rolls are baking, prepare the chili honey by warming the honey gently in a saucepan over low heat. Stir in the chili flakes and apple cider vinegar.
7. Once the rolls are done, drizzle them generously with the spicy honey and garnish with chopped parsley, if using.
8. Serve warm and enjoy the blend of sweet, spicy, and savory flavors!
Variations & Tips
For those who like a bit of extra crunch, add some sesame or poppy seeds to the rolls before baking. You can also vary the cheese by using a mix of feta and cream cheese for a creamier texture. If chili flakes are too spicy for your taste, a sprinkle of smoked paprika mixed into the honey offers a more mellow warmth.
