Sometimes, after a long day of work, I crave something light yet satisfying, and that's where these caprese stuffed avocados come into play. Inspired by the classic Italian Caprese salad, this recipe brings together fresh mozzarella, juicy tomatoes, fragrant basil, and creamy avocado for a delightful meal that’s easy to prepare and perfect for busy weeknights. Trust me, this dish will quickly become one of your go-to favorites for when you want a quick, healthy, and delicious option.
These caprese stuffed avocados are wonderfully versatile and can be enjoyed on their own as a light lunch or dinner. For a more substantial meal, pair them with a slice of crusty bread or a side of grilled chicken. A chilled glass of crisp, white wine like Sauvignon Blanc also complements the dish beautifully. If you're hosting a gathering, these make a great appetizer too!
Caprese Stuffed Avocados
Servings: 4
Ingredients
2 large ripe avocados
1 cup cherry tomatoes, halved
1/2 cup fresh mozzarella balls (bocconcini), halved
1/4 cup fresh basil leaves, chopped
2 tablespoons balsamic glaze
1 tablespoon extra virgin olive oil
Salt and pepper to taste
Directions
1. Slice the avocados in half lengthwise and remove the pits. Gently scoop out a bit of the flesh from each half to create a larger cavity for the filling, and set the scooped flesh aside.
2. In a bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil. Season with salt and pepper to taste, and drizzle with the extra virgin olive oil.
3. Gently stir the mixture until everything is evenly coated.
4. Spoon the tomato and mozzarella mixture into the avocado halves, filling each cavity generously.
5. Drizzle the filled avocados with balsamic glaze for an extra burst of flavor.
6. Optionally, chop the scooped avocado flesh and mix it in with the filling or save it for another use.
7. Serve immediately, enjoying the wonderful combination of fresh ingredients.
Variations & Tips
For a different twist, try adding a sprinkle of pine nuts or sunflower seeds for some added crunch. If you’re a fan of heat, a touch of red pepper flakes can give the dish a nice kick. You can also swap out the cherry tomatoes for sun-dried tomatoes for a more intense flavor. For vegetarians, you can add cooked quinoa or chickpeas to the filling for a protein boost.
