It’s a perfect way to satisfy your sweet tooth without compromising on health.
This low carb cottage cheese ice cream pairs wonderfully with a handful of fresh berries like raspberries or blueberries, which add a burst of tartness to the creamy ice cream. For a more decadent experience, drizzle a little bit of sugar-free chocolate syrup or a few crushed nuts on top. Low Carb Cottage Cheese Ice Cream

Ingredients
2 cups full-fat cottage cheese
1 cup heavy cream
1/2 cup erythritol (or preferred low-carb sweetener)
1 tablespoon vanilla extract
1/4 teaspoon xanthan gum
Directions
1. Begin by blending the full-fat cottage cheese in a food processor or high-speed blender until smooth and creamy.
2. In a large mixing bowl, whisk together the heavy cream, erythritol, vanilla extract, and xanthan gum until well combined.
3. Gently fold the blended cottage cheese into the cream mixture and mix until thoroughly incorporated.
4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until the mixture reaches a soft-serve consistency.
5. Transfer the ice cream to an airtight container and freeze for at least 2-3 hours before serving to allow the ice cream to firm up.
Variations & Tips
To add a fruity twist, fold in a 1/2 cup of pureed strawberries or raspberries into the ice cream mixture before churning. For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the mixture.
