This dish combines the sweetness of brown sugar and pineapples with the savory flavor of pork chops, resulting in a perfect blend that's sure to impress your family or dinner guests. It's inspired by my love for sweet and savory combinations and those cherished summer barbecue vibes, even when it's cold outside.
These pork chops pair wonderfully with fluffy white rice or creamy mashed potatoes to soak up all the delicious sauce. For a bit of freshness and crunch, a simple garden salad or steamed green beans makes a perfect side dish. If you're looking to keep things cozy, some warm rolls or cornbread can be a great addition to the meal.
Brown Sugar-Pineapple Pork Chops
Servings: 4
Ingredients
4 pork chops, bone-in or boneless
1 cup brown sugar
1 can pineapple slices, with juice (20 oz)
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon salt
Directions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium-high heat.
3. Season the pork chops with salt, pepper, and garlic powder.
4. Sear the pork chops in the skillet for about 2-3 minutes on each side, until they are golden brown. Transfer them to a baking dish.
5. In a small bowl, mix the brown sugar, soy sauce, and pineapple juice from the can until well combined.
6. Pour the brown sugar mixture over the pork chops, and arrange the pineapple slices on top of each chop.
7. Bake in the preheated oven for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
8. Let the pork chops rest for a few minutes before serving to allow the juices to redistribute.
Variations & Tips
If you're feeling adventurous, try using maple syrup or honey instead of brown sugar for a different sweetness profile. For a bit of heat, add a pinch of red pepper flakes to the brown sugar mixture. You can also switch up the fruit—peaches or apples would work wonderfully in place of pineapple. If you're short on time, this recipe can be adapted for the slow cooker: just sear the pork chops, place all ingredients in the slow cooker, and cook on low for 4-5 hours.
