Cracker Barrel Copycat Meatloaf

Ingredients
1 1/2 lbs ground beef
1/2 cup finely chopped onion
1/4 cup finely chopped bell pepper
1 egg, beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup crushed Ritz crackers
1 cup shredded cheddar cheese
1/4 cup milk
1/4 cup ketchup
Directions
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, mix together the ground beef, chopped onion, chopped bell pepper, beaten egg, salt, and black pepper until well combined.
3. Add the crushed Ritz crackers, shredded cheddar cheese, and milk to the mixture. Blend everything together until uniform but be careful not to over-mix.
4. Shape the meat mixture into a loaf and place it in a baking dish or loaf pan.
5. Spread the ketchup evenly over the top of the meatloaf.
6. Bake in the preheated oven for 60-70 minutes, or until the meatloaf is cooked through and has reached an internal temperature of 160°F (70°C).
7. Allow the meatloaf to rest for 10 minutes before slicing and serving.
