When the days get busy and you want a cozy, warm dinner that brings everyone to the table, baked cheesy chicken and peppers is a true winner. This delightful dish combines tender chicken breasts with the sweet tang of bell peppers, all smothered in melted cheese. It's a family favorite in our house! This dish is perfect for those busy weeknights or as a comfort dish on a lazy Sunday. Plus, it's a great way to get those veggies into your loved ones' meals.
This baked cheesy chicken and peppers pairs wonderfully with a side of fluffy white rice or some buttery mashed potatoes. A fresh green salad with a light vinaigrette or some steamed broccoli adds a nice crunchy contrast to the creamy, cheesy goodness. For an extra special touch, a slice of warm, crusty bread is perfect for mopping up any leftover sauce on your plate.
Baked Cheesy Chicken and Peppers
Servings: 4
Ingredients
4 boneless, skinless chicken breasts
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Directions
Preheat your oven to 375°F (190°C).
Lightly grease a baking dish with some olive oil.
Place the chicken breasts in the dish and drizzle with olive oil.
Season the chicken with garlic powder, paprika, salt, and pepper.
Arrange the sliced bell peppers and onions over the chicken.
Sprinkle the shredded mozzarella and cheddar cheese evenly over the top.
Cover the dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Sprinkle the fresh chopped parsley over the top before serving.
Variations & Tips
If you have picky eaters, you can swap out the bell peppers for milder veggies like zucchini or squash. For a spicier kick, add some sliced jalapenos or a pinch of red pepper flakes when seasoning the chicken. If you prefer a creamier sauce, stir in a half cup of heavy cream with the cheese before baking.
