Amish Banana Cream Pie
Servings: 8
Ingredients
1 pre-baked pie crust
3 ripe bananas, sliced
3/4 cup granulated sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups whole milk
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 tablespoons powdered sugar
Directions
1. In a medium saucepan, whisk together the sugar, flour, and salt.
2. Gradually add the milk, whisking constantly to avoid lumps.
3. Cook over medium heat, stirring constantly, until the mixture is thick and bubbly. Continue cooking and stirring for another 2 minutes, then remove from heat.
4. Slowly stir a small amount of the hot mixture into the beaten egg yolks to temper them. Then, return the egg mixture to the saucepan.
5. Cook for another 2 minutes, stirring constantly, then remove from heat and stir in the butter and vanilla extract.
6. Let the custard cool slightly while you arrange the banana slices in the pre-baked pie crust.
7. Pour the warm custard over the banana slices. Cover the pie with plastic wrap, ensuring the wrap is touching the surface to prevent a skin from forming. Refrigerate for at least 4 hours, or until set.
8. Just before serving, whip the heavy cream with the powdered sugar until stiff peaks form. Spread the whipped cream over the pie.
Variations & Tips
For a fun twist, you can add a layer of chocolate ganache at the bottom of the pie crust before arranging the banana slices. If you're short on time, using a store-bought pie crust and pre-made whipped topping can speed up the process. You can also use light or non-dairy milk if you're looking to reduce the dairy content. A sprinkle of shaved chocolate or a drizzle of caramel on top adds an extra touch of indulgence!
