Jalapeno Popper Egg Bites In Muffin Tin
Servings: 12
Ingredients
6 large eggs
1/2 cup milk (whole or your choice of milk)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1/4 cup diced jalapenos (remove seeds for less heat)
1/4 cup crumbled cooked bacon (optional)
1 tablespoon chopped fresh chives (optional)
Directions
Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
Add the shredded cheddar cheese, softened cream cheese, diced jalapenos, and crumbled bacon. Mix until everything is evenly distributed.
Pour the egg mixture evenly into the prepared muffin tin cups, filling each about 3/4 of the way full.
Sprinkle the chopped chives on top of each egg bite, if using.
Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden brown around the edges.
Remove from the oven and let them cool in the muffin tin for a few minutes before carefully removing them with a spatula or butter knife.
Serve warm or store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 20-30 seconds before serving.
Variations & Tips
For a vegetarian version, simply omit the bacon. You can also switch up the cheeses—try pepper jack for an extra kick, or mozzarella for a milder flavor.
