This creamy garlic pork chops with cheesy potato bake is a perfect weeknight dinner that feels like a weekend indulgence. I first tried this dish during a potluck with my neighbors, and it instantly became a hit with my family. It's the ultimate comfort food, combining savory pork chops with a creamy garlic sauce and, of course, a side of irresistible cheesy potatoes. Whether you’re cooking for your family or hosting friends, this dish is sure to impress without taking up too much of your time.
This dish pairs wonderfully with a fresh green salad or some steamed veggies, like broccoli or green beans, to balance out the richness. If you’re feeling particularly indulgent, some crusty bread on the side can help scoop up that delicious garlic cream sauce.
Creamy Garlic Pork Chops with Cheesy Potato Bake
Servings: 4
Ingredients
4 boneless pork chops
Salt and pepper to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
6 medium potatoes, thinly sliced
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 cup milk
2 tablespoons butter
Directions
Preheat your oven to 375°F (190°C).
Season the pork chops with salt and pepper on both sides.
In a large skillet, heat olive oil over medium-high heat. Add pork chops and sear until golden brown on both sides. Remove from the skillet and set aside.
Reduce the heat to medium and add minced garlic to the skillet. Cook for about 1 minute until fragrant.
Stir in the heavy cream, chicken broth, thyme, and parsley. Bring the mixture to a simmer and cook for about 5 minutes until slightly thickened.
Return the pork chops to the skillet and spoon some sauce over them. Let them simmer in the sauce for another 10 minutes or until cooked through.
Meanwhile, in a large mixing bowl, combine the thinly sliced potatoes, shredded cheddar cheese, grated Parmesan, shredded mozzarella, milk, and melted butter. Season with salt and pepper to taste and mix well.
Transfer the potato mixture to a greased baking dish and spread it out evenly.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and continue baking for another 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
Serve the creamy garlic pork chops alongside the cheesy potato bake and enjoy!
Variations & Tips
For a healthier twist, you could use sweet potatoes instead of regular potatoes in the cheesy bake, or even a mix of both. You can also swap out the heavy cream for a lighter option like half-and-half, though it may slightly alter the richness of the sauce. If you're a fan of spice, adding a pinch of red pepper flakes to the garlic cream sauce can give it a nice kick.
