Perfect for satisfying those sweet tooth cravings without straying from your keto goals, this mousse is a hit whether you're hosting a dinner party or just want a treat after a long work week.
This keto lemon mousse pairs wonderfully with fresh berries or a dollop of whipped cream. For a bit of texture, a sprinkle of chopped nuts or some unsweetened coconut flakes would be a great addition. If you're making a full meal, consider serving it after a light, savory dish like grilled salmon or chicken with a green salad.
Keto Lemon Mousse
Servings: 4 servings
Ingredients
1 cup heavy whipping cream
4 oz cream cheese, softened
1/4 cup powdered erythritol or your favorite keto-friendly sweetener
2 tbsp lemon juice
1 tbsp lemon zest
1/2 tsp vanilla extract
Directions
1. In a medium bowl, beat the heavy whipping cream with an electric mixer until stiff peaks form. Set aside.
2. In another bowl, beat the softened cream cheese until smooth.
3. Add the powdered erythritol, lemon juice, lemon zest, and vanilla extract to the cream cheese and mix until fully combined.
4. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
5. Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
6. Serve chilled, optionally garnished with extra lemon zest or a few fresh berries.
