Sweet Alabama Pecan Bread
Servings: 12
Ingredients
1 cup granulated sugar
1 cup light brown sugar, packed
1 cup vegetable oil
4 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 1/2 cups chopped pecans
Directions
Preheat your oven to 325°F (165°C). Grease and flour a 9x13-inch baking dish.
In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until smooth.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the sugar mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
Fold in the chopped pecans.
Pour the batter into the prepared baking dish and spread it evenly.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Variations & Tips
For a nut-free version, you can substitute the pecans with raisins or chocolate chips. If you are looking to make this recipe a bit healthier, try using half whole wheat flour and half all-purpose flour. For those who love a bit of spice, add a teaspoon of cinnamon to the dry ingredients. And for an extra indulgent twist, drizzle a simple glaze made from powdered sugar and a bit of milk over the cooled bread.
