2 ripe bananas, sliced and frozen
1/2 cup coconut milk
1 tablespoon honey or maple syrup (optional)
Directions
1. Add the frozen strawberries and banana slices to a food processor or high-speed blender.
2. Pour in the coconut milk and add the honey or maple syrup if using.
3. Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
4. Serve immediately for a soft-serve consistency or transfer to a freezer-safe container and freeze for 1-2 hours for a firmer texture.
5. Scoop into bowls or cups and enjoy!
Variations & Tips
For a tropical twist, try adding a handful of frozen pineapple chunks. You can also experiment with different types of milk if coconut milk isn’t your preference—almond milk or regular dairy milk works just as well. For those looking to cut down on sugar, you can easily omit the honey or maple syrup. If you have any leftovers, store them in an airtight container in the freezer, and simply let it thaw for a few minutes before serving again.
