Cooktop Cove: I've tried a lot of takes on this dish, but this one tops them all
By Holly Owens
There's something wonderfully comforting about a home-cooked meatloaf, isn't there? My Slow Cooker Lipton Onion Meatloaf is a fantastic twist on a classic dish that my family absolutely loves. This recipe brings together the rich flavor of Lipton onion soup mix and the convenience of a slow cooker, making it perfect for those busy days when you still want to put a hearty meal on the table. Trust me, once you try it, this meatloaf will become a regular in your meal rotation.
This meatloaf pairs wonderfully with a side of mashed potatoes and steamed green beans. You could also serve it with a simple side salad and some crusty bread to soak up all the delicious juices. If you're feeling a bit adventurous, try pairing it with some roasted vegetables for a balanced and satisfying meal.
Slow Cooker Lipton Onion Meatloaf
Servings: 6-8
Ingredients
2 pounds ground beef
1 packet Lipton onion soup mix
2 eggs
3/4 cup breadcrumbs
1/2 cup ketchup
1/4 cup milk
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
Salt and pepper to taste
Directions
1. In a large bowl, combine the ground beef, Lipton onion soup mix, eggs, breadcrumbs, ketchup, milk, Worcestershire sauce, garlic powder, salt, and pepper.
2. Mix the ingredients together until well combined. It's easiest to use your hands for this to ensure everything is evenly mixed.
3. Shape the mixture into a loaf shape and place it in your slow cooker.
4. Cover the slow cooker and cook on low for 6-8 hours, or until the meatloaf reaches an internal temperature of 160°F.
5. Once cooked, carefully remove the meatloaf from the slow cooker and let it rest for a few minutes before slicing.
Variations & Tips
For a twist, you could add some chopped bell peppers or shredded carrots to the meatloaf mixture for extra flavor and nutrients. If you prefer a bit of a kick, try adding a dash of hot sauce or some chopped jalapeños. Another option is to use ground turkey instead of beef for a leaner version. And if you’re looking for a gluten-free option, simply use gluten-free breadcrumbs.
