Cooktop Cove: I was sure my aunt's recipe was long gone, but I found it and it's tastier than ever!
By McKayla Davis
This cabbage and noodles recipe is a comforting, hearty dish that's perfect for family dinners, especially during the colder months. It has roots in Eastern European cuisine, specifically from countries like Poland and Hungary, where it’s known as Haluski. This dish is not just delightfully filling, but it's also incredibly budget-friendly. Plus, it's a great way to sneak in some vegetables for the picky eaters in your household.
This dish pairs wonderfully with a simple green salad or steamed vegetables for a light and balanced meal. For a heartier dinner, you can serve it alongside grilled sausages or a roasted chicken. A crusty piece of bread or a warm dinner roll can help soak up the delicious flavors too!
Cabbage & Noodles
Servings: 4-6 servings
Ingredients
1 medium head of green cabbage, chopped
1 large onion, finely chopped
4 tablespoons butter
8 ounces wide egg noodles
Salt and pepper to taste
Optional: 1 teaspoon caraway seeds
Optional: Fresh parsley for garnish
Directions
1. Cook the egg noodles according to the package directions. Drain and set aside.
2. In a large skillet, melt the butter over medium heat.
3. Add the onion and sauté until soft and translucent, about 5 minutes.
4. Stir in the chopped cabbage and cook until the cabbage is tender and slightly caramelized, about 15-20 minutes. Stir occasionally to prevent sticking.
5. If using, add the caraway seeds and season with salt and pepper to taste.
6. Add the cooked noodles to the skillet and toss to combine with the cabbage mixture.
7. Cook for an additional 5 minutes, stirring occasionally, until everything is heated through.
8. Garnish with fresh parsley if desired and serve warm.
Variations & Tips
For a protein boost, you can add sliced kielbasa or cooked bacon to the skillet along with the onions. If you want a vegetarian option with some extra texture, try adding sliced mushrooms. For extra flavor, a splash of soy sauce or a bit of garlic powder can be added to the dish. Finally, if you have picky eaters, consider blending the cooked cabbage into a smoother consistency before mixing it with the noodles; it makes the veggies less noticeable and more appealing to kids.
