Linguine Scampi with White Wine
Servings: 4
Ingredients
1 pound linguine pasta
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 pound large shrimp, peeled and deveined
1/2 teaspoon red pepper flakes
1/2 cup dry white wine
Juice of 1 lemon
1/4 cup finely chopped fresh parsley
Salt and pepper to taste
Directions
1. Cook the linguine according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until the butter is melted.
3. Add the minced garlic and red pepper flakes to the skillet, cooking for about 1 minute until fragrant.
4. Add the shrimp to the skillet, cooking until they turn pink, about 2-3 minutes per side.
5. Pour in the white wine and lemon juice, bringing the mixture to a simmer. Let it cook for about 2 minutes to allow the flavors to meld.
6. Add the cooked linguine to the skillet along with the remaining 2 tablespoons of butter and the chopped parsley, tossing everything together until well combined.
7. Season with salt and pepper to taste. Serve immediately, garnished with extra parsley if desired.
