Sicilian Chicken Soup
Servings: 6
Ingredients
1 whole chicken (about 4 pounds)
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
3 celery stalks, diced
3 large carrots, diced
1 can (14.5 ounces) diced tomatoes
8 cups chicken broth
1 bay leaf
1 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste
1 cup cooked pasta (like ditalini or small shells)
1/4 cup fresh parsley, chopped
Directions
1. In a large pot, heat olive oil over medium heat. Add diced onion, garlic, celery, and carrots. Sauté until vegetables are tender, about 5-7 minutes.
2. Add the whole chicken to the pot and pour in the chicken broth. Add the diced tomatoes, bay leaf, oregano, basil, salt, and pepper.
3. Bring the soup to a boil, then reduce heat to low. Cover and let simmer for about 1 hour, or until the chicken is fully cooked and tender.
4. Carefully remove the chicken from the pot and let it cool slightly. Remove the meat from the bones, shredding it into bite-sized pieces, and discard the bones.
5. Return the shredded chicken to the pot. Add the cooked pasta and fresh parsley. Stir to combine and let heat through for an additional 5 minutes.
6. Taste and adjust seasoning if necessary. Serve hot, topped with a sprinkle of grated Parmesan cheese if desired.
Variations & Tips
For picky eaters, you can blend some of the vegetables into the broth to create a smoother texture. If you prefer a lighter soup, substitute the pasta with a handful of spinach or kale added in the last few minutes of cooking.
