Cooktop Cove: You haven't had real meatloaf until you try the gravy on this one!
By Holly Owens
Southern Meatloaf with Tomato Gravy is a comforting classic that feels like a warm hug in food form. Whether you're a seasoned home cook or just starting out, this easy-to-follow recipe brings together the savory flavors of the Midwest with a hint of Southern charm. It's perfect for a busy weeknight dinner or even a laid-back weekend meal. The first time I made this, it reminded me of Sunday dinners at my grandma's house, where the aroma of something hearty cooking would fill the entire house.
This meatloaf pairs wonderfully with mashed potatoes and green beans, making for a whole meal that's both satisfying and nutritious. You can also serve it with a side of cornbread or a simple mixed greens salad dressed in a light vinaigrette. Don't forget a glass of sweet tea or lemonade to really bring out those comforting Southern vibes.
Southern Meatloaf with Tomato Gravy
Servings: 6
Ingredients
1 1/2 pounds ground beef
1/2 pound ground pork
1 onion, finely chopped
1 bell pepper, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
2 eggs, beaten
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 cup ketchup
1 can (15 ounces) tomato sauce
2 tablespoons all-purpose flour
1 cup beef broth
Directions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, ground pork, chopped onion, bell pepper, and garlic.
Add the breadcrumbs, milk, beaten eggs, Worcestershire sauce, salt, black pepper, and paprika to the meat mixture. Mix until well combined.
Shape the mixture into a loaf and place it in a baking dish.
Spread the ketchup evenly over the top of the meatloaf.
Bake for 1 hour or until the internal temperature reaches 160°F (71°C).
While the meatloaf is baking, prepare the tomato gravy. In a medium saucepan, heat the tomato sauce over medium heat.
Stir in the flour and cook for about 2 minutes, stirring constantly.
Gradually add the beef broth, continuing to stir until the gravy thickens, about 5-7 minutes.
Once the meatloaf is done, let it rest for about 10 minutes before slicing.
Serve with the tomato gravy drizzled over the top.
