This hearty dish is perfect for those busy mornings when you want a warm, filling breakfast without all the fuss. Originating from the idea of a convenient breakfast casserole, this slow cooker version lets you toss everything in and forget about it until it's done. It's perfect for feeding a crowd, especially when you have family or friends staying over for the weekend.
This Tater Tot Sausage Breakfast Bowl is pretty much a meal on its own, but you can always pair it with some fresh fruit or a simple green salad to balance out the richness. A nice cup of coffee or a glass of orange juice would also complement it beautifully, giving you that perfect morning boost.
Slow Cooker Tater Tot Sausage Breakfast Bowl with Gravy
Servings: 6
Ingredients
1 pound breakfast sausage
1 small onion, diced
1 bell pepper, diced
3 cups shredded cheddar cheese
1 bag (32 ounces) frozen tater tots
6 large eggs
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 packet (2.75 ounces) country gravy mix
2 cups water
Directions
1. In a large skillet, cook the sausage over medium heat until browned, breaking it up as it cooks. Drain any excess grease.
2. Add the diced onion and bell pepper to the skillet and cook until softened, about 4-5 minutes.
3. In a large bowl, whisk together the eggs, milk, salt, and pepper.
4. Lightly grease the inside of your slow cooker. Layer half of the tater tots in the bottom.
5. Add the cooked sausage mixture over the tater tots. Sprinkle half of the cheese on top.
6. Pour the egg mixture over the top, spreading it out evenly.
7. Add the remaining tater tots, followed by the remaining cheese.
8. Cover and cook on low for 6-8 hours or on high for 2-3 hours, until the eggs are fully set and cooked through.
9. About 15 minutes before serving, prepare the country gravy according to the package instructions using the 2 cups of water.
10. Serve the breakfast bowl hot with the gravy drizzled on top.
Variations & Tips
Feel free to mix things up! You can use turkey sausage or even a veggie alternative to keep it lighter. Try adding some diced tomatoes or spinach for extra veggies. If you're a spice lover, toss in some jalapeños or a dash of hot sauce in the egg mixture.
