Cheesy Monterey Spaghetti Bake

Ingredients
12 oz spaghetti
2 cups shredded Monterey Jack cheese
1 cup grated Parmesan cheese
1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1/2 cup panko breadcrumbs
2 tablespoons olive oil
1 tablespoon chopped fresh parsley (optional)
Directions
Preheat your oven to 350°F (175°C).
Cook the spaghetti according to package instructions until al dente, then drain and set aside.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1 minute, making a roux.
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring, until the sauce thickens, about 3-5 minutes.
Remove the saucepan from heat and stir in the Monterey Jack cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Stir until the cheese is completely melted and the sauce is smooth.
Combine the cooked spaghetti and cheese sauce in a large mixing bowl. Toss until the pasta is evenly coated.
Transfer the spaghetti mixture into a greased 9x13-inch baking dish.
In a small bowl, mix together the panko breadcrumbs and olive oil. Sprinkle the mixture evenly over the spaghetti.
Bake in the preheated oven for 20-25 minutes, until the top is golden brown and crispy.
Garnish with chopped fresh parsley, if desired, before serving.
