Cooktop Cove: Just two ingredients and they taste amazing! 'Apple Joy' has been requested four times this week!

As someone who's always dancing between office meetings and kitchen adventures, I love recipes that bring comfort without the complexity. Rice paper rolls are a staple in my house for their versatility and ease, and this 2-ingredient baked apple pie filling rice paper roll is a delightful twist on tradition. Originating from a fusion of Asian and American comfort food staples, these rolls are perfect when you're craving something sweet but want to keep things light. They're essentially fall in a bite, offering the comforting sweetness of apple pie filling wrapped in a delicate rice paper shell. Perfect for those busy weeknights or a quick snack during a movie night.
These apple pie rice paper rolls are delightful on their own, but if you're looking to elevate your experience, pair them with a scoop of vanilla ice cream or a dollop of whipped cream on the side. For a more decadent touch, drizzle some caramel sauce over the top. If you're serving these at a gathering, a warm chai tea or spiced apple cider would be the perfect sip to accompany these cozy treats.
2-Ingredient Baked Apple Pie Filling Rice Paper Rolls
Servings: 4
Ingredients
1 can of apple pie filling (approx. 20 ounces)
8 rice paper wrappers
Directions
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Fill a shallow bowl with warm water. One at a time, dip each rice paper wrapper into the water for about 10 seconds until soft.
Lay the softened wrapper on a clean, flat surface. Place 2 tablespoons of apple pie filling in the center.
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly like a burrito.
Place the roll seam-side down in the prepared baking dish. Repeat with the remaining wrappers and filling.
Bake the rolls in the preheated oven for 15-20 minutes, or until the wrappers are crisp and lightly golden brown.
Let the rolls cool slightly before serving. Enjoy them warm and gooey!
Variations & Tips
For a spiced variation, mix a dash of cinnamon and nutmeg into the apple pie filling before wrapping. You can also add some chopped nuts like pecans or walnuts for additional texture. If you want to make the rolls more dessert-like, dust the finished rolls with powdered sugar. For a savory twist, try using pear or peach filling instead of apple pie filling. These rolls are quite forgiving, so feel free to experiment with your favorite fruit fillings!
