Slow Cooker Amish Turkey and Rice Casserole

Ingredients
1 lb ground turkey
1 tablespoon olive oil
1 onion, diced
4 cloves garlic, minced
1 cup carrots, diced
1 cup celery, diced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 cup uncooked long-grain rice
2 cups chicken broth
1 cup cream of mushroom soup
1 cup frozen peas
1/2 cup shredded cheddar cheese
Directions
In a skillet over medium heat, add olive oil and sauté the onion and garlic until fragrant.
Add the ground turkey and cook until browned.
Transfer the cooked turkey, onion, and garlic to your slow cooker.
Add the carrots, celery, thyme, rosemary, salt, pepper, rice, chicken broth, and cream of mushroom soup to the slow cooker.
Stir well to combine.
Cover and cook on low for 4-5 hours, or until the rice is tender.
About 30 minutes before serving, stir in the frozen peas.
Just before serving, sprinkle the cheddar cheese on top, allowing it to melt before enjoy.
