Cowboy queso dip is the ultimate party pleaser, combining the creamy, melty, gooey goodness of cheese with the bold flavors of the Southwest. This dish is perfect for game days, family gatherings, or just a cozy night in. Growing up in the Midwest, I remember my mom making a version of this dip for every holiday party. It's a nostalgic dish that brings people together, and it's so easy to whip up even on a busy weeknight.
Cowboy queso dip pairs perfectly with a variety of sides. Serve it with tortilla chips for a classic combination, or try it with crunchy veggie sticks like celery and bell peppers for a lighter option. It's also delicious spooned over baked potatoes or used as a topping for nachos. For a heartier meal, serve it alongside grilled chicken or steak.
Cowboy Queso Dip
Servings: 8
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 can (10 ounces) diced tomatoes with green chilies
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 pound Velveeta cheese, cubed
1 cup shredded cheddar cheese
1/4 cup milk
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
1/4 cup chopped fresh cilantro (optional)
Directions
1. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
2. Add the diced onion and garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
3. Stir in the diced tomatoes with green chilies, black beans, and corn. Cook for another 2-3 minutes until heated through.
4. Reduce the heat to low and add the Velveeta cheese cubes, shredded cheddar cheese, and milk. Stir continuously until the cheese is completely melted and the mixture is smooth.
5. Season with chili powder, cumin, salt, and pepper. Adjust the seasonings to taste.
6. If desired, stir in the chopped cilantro just before serving.
7. Transfer the dip to a serving bowl and enjoy warm with your favorite sides.
Variations & Tips
For a spicier version, add a diced jalapeño or a dash of hot sauce. You can substitute ground turkey or chicken for the beef if you prefer a lighter option. For a vegetarian version, simply omit the meat and increase the amount of beans or add some sautéed mushrooms. If you're short on time, you can make this dip in a slow cooker. Just brown the meat and onions first, then combine all ingredients in the slow cooker and cook on low for 2-3 hours.
